What to do with your Christmas Left-Overs?

Salmon devilled eggs

Ingredients

  • 8 large free-range eggs
  • 25 g smoked salmon
  • 4 sprigs of fresh dill , plus extra for serving
  • 1 pinch of cayenne pepper
  • MAYONNAISE
  • 1 large free-range egg yolk
  • 2 teaspoons Dijon mustard
  • 1/2 lemon , (20ml juice)
  • 100 ml olive oil
  • 100 ml sunflower oil

Ham, vegetable and haloumi frittata

Ingredients

  • 6 Coles free range eggs
  • 2 tablespoon Coles thickened cream
  • 2 cups leftover cooked vegetables, such as pumpkin, cauliflower or broccoli
  • 2 cups ham, chopped
  • 4 spring onions, chopped,
  • 1 spring onion, shredded, to serve
  • 180g haloumi, chopped
  • 1/2 cup coriander leaves, to serve

  • butter - 30 g
  • White pepper - To taste
  • Nutmeg - To taste
  • Parmesan - 30 g (or Grana Padano), grated
  • Eggs - 2
  • Flour - As needed
  • Bread crumbs - As needed
  • Parsley - To taste
  • Salt - To taste

Chocolate truffles

Ingredients

  • 250 g good-quality dark chocolate (70% cocoa solids)
  • 125 ml double cream
  • 25 g butter
  • 1 pinch of sea salt
  • 1 large handful of hazelnuts , bashed up
  • 50 g good-quality cocoa powder
  • 1 pinch of chilli powder
